- 2 grilled chicken breasts, sliced
- 1 cup fresh blueberries
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons dried cranberries
- 1/4 cup toasted almonds or pecans (optional)
For the Balsamic Vinaigrette:
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
- Prepare the dressing: Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper. Set aside.
- Grill the chicken: Season with salt and pepper. Grill over medium-high heat for 6-7 minutes per side until fully cooked. Let rest before slicing.
- Prepare salad ingredients: Wash and dry greens, slice cucumber and red onion, and toast nuts if using.
- Assemble the salad: In a large bowl, layer the greens, blueberries, cucumber, red onion, dried cranberries, and feta.
- Add the chicken: Slice and place on top of the salad.
- Drizzle with dressing: Toss gently to combine and serve immediately.
