Ingredients

  • 4 cups mixed greens (spinach, arugula, or romaine)
  • 2 grilled chicken breasts, sliced
  • 1 cup fresh blueberries
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons dried cranberries
  • 1/4 cup toasted almonds or pecans (optional)

For the Balsamic Vinaigrette:

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  • Prepare the dressing: Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper. Set aside.
  • Grill the chicken: Season with salt and pepper. Grill over medium-high heat for 6-7 minutes per side until fully cooked. Let rest before slicing.
  • Prepare salad ingredients: Wash and dry greens, slice cucumber and red onion, and toast nuts if using.
  • Assemble the salad: In a large bowl, layer the greens, blueberries, cucumber, red onion, dried cranberries, and feta.
  • Add the chicken: Slice and place on top of the salad.
  • Drizzle with dressing: Toss gently to combine and serve immediately.
