- 2 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 cups uncooked rotini pasta
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups half and half
- 1 packet ranch seasoning mix
- 1½ cups shredded sharp cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Bacon: Fry bacon in a skillet over low heat until crispy. Drain on a paper towel and chop; reserve drippings.
- Prepare the Chicken: Season chicken with salt, pepper, onion powder, and Italian seasoning. Sear in reserved bacon drippings until golden and cooked through. Rest and chop.
- Cook the Pasta: Boil pasta in salted water until al dente. Drain and set aside.
- Make the Sauce: Melt butter in the skillet, sauté garlic, and stir in flour to create a roux. Gradually add half and half, then whisk in ranch seasoning. Stir in cheese until melted.
- Combine: Add cooked pasta and chicken to the sauce. Stir gently to coat and heat through.
- Serve: Plate and top with chopped bacon and parsley.
Notes
- Cheese Swap: Replace cheddar with mozzarella or Parmesan for a different flavor.
- Vegetable Additions: Add steamed broccoli or peas for color and nutrients.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk to loosen the sauce.
