For the Brownie Layer:
  • ½ cup butter (melted)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup cocoa powder
  • ¼ tsp salt
For the Cookie Layer:
  • ½ cup butter (softened)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  • Make the brownie batter: Whisk together melted butter and sugar. Add eggs and vanilla, then mix in flour, cocoa powder, and salt. Spread into the pan.
  • Make the cookie dough: Cream butter and sugars. Add egg and vanilla, then mix in flour and baking soda. Fold in chocolate chips.
  • Drop spoonfuls of cookie dough over the brownie batter and gently press down.
  • Bake for 25-30 minutes, until the cookie layer is golden and a toothpick comes out with a few moist crumbs.
  • Let cool before slicing into squares.

Notes

  • For extra fudgy brookies, slightly underbake them.
  • Chill the cookie dough before layering for a more defined texture.
