Instructions

  • Preheat oven to 375°F (190°C) and grease a 5×9-inch baking dish.
  • In a bowl, whisk together eggs, cottage cheese, Parmesan, mozzarella, salt, and pepper.
  • In a skillet, melt butter over medium heat, add spinach, and cook until wilted. Drain any excess moisture.
  • Fold the spinach into the egg mixture and pour it into the baking dish.
  • Bake for 25-30 minutes, until set and golden brown on the edges.
  • Let cool for 5 minutes before slicing. Serve warm or store for later.
