  • 1 medium onion, thinly sliced (optional)

  • 3 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 2 cups shredded cheddar cheese (or your favorite cheese)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Peel and thinly slice potatoes and onions. Layer them alternately in the dish.
  • In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk and cook until thickened.
  • Remove from heat and stir in cheese, garlic powder, salt, pepper, and paprika.
  • Pour cheese sauce over layered potatoes and onions, spreading evenly.
  • Cover with foil and bake for 30 minutes. Remove foil and bake for another 10–15 minutes until golden brown.
  • Let rest for 5 minutes before serving.
