- 4 medium-sized russet potatoes (about 2 lbs), peeled and thinly sliced
- 1 medium onion, thinly sliced (optional)
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk (whole or 2%)
- 2 cups shredded cheddar cheese (or your favorite cheese)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Peel and thinly slice potatoes and onions. Layer them alternately in the dish.
- In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk and cook until thickened.
- Remove from heat and stir in cheese, garlic powder, salt, pepper, and paprika.
- Pour cheese sauce over layered potatoes and onions, spreading evenly.
- Cover with foil and bake for 30 minutes. Remove foil and bake for another 10–15 minutes until golden brown.
- Let rest for 5 minutes before serving.

- Use a mandoline for uniform potato slices to ensure even cooking.
- Swap cheddar for Gruyère, Swiss, or a cheese blend for a different flavor.
- Add bacon bits or fresh herbs like thyme for extra depth.
