  • 1 cup shredded cheddar cheese

  • 4 large eggs

  • 1/2 cup milk

  • 1/2 cup cooked ham or turkey bacon (optional)

  • 1/4 cup green onions or chives, chopped

  • 2 tbsp butter

  • Salt & pepper to taste


Instructions

  • Boil diced potatoes until fork-tender, about 8–10 minutes. Drain well.

  • Sauté potatoes in butter until golden and slightly crispy.

  • Add ham or turkey bacon if using, cook 2–3 minutes.

  • Whisk eggs, milk, salt, and pepper. Pour over potatoes.

  • Gently scramble until eggs are just set.

  • Top with cheese, cover, and let melt.

  • Garnish with green onions or chives. Serve warm.
