- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp dried oregano
- 1½ lbs baby potatoes, quartered
- 1 cup beef broth
- ½ cup heavy cream
- 1½ cups shredded cheddar cheese
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned.
- Stir in onion, garlic, salt, black pepper, paprika, and oregano. Cook for 2-3 minutes.
- Add the quartered potatoes and pour in the beef broth. Bring to a simmer, cover, and cook for 15 minutes.
- Reduce heat, stir in heavy cream, and let simmer for 2 minutes.
- Sprinkle cheddar cheese on top, cover, and let melt for 3-5 minutes.
- Garnish with fresh parsley and serve warm.
