Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • lbs baby potatoes, quartered
  • 1 cup beef broth
  • ½ cup heavy cream
  • 1½ cups shredded cheddar cheese
  • Fresh parsley, for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned.
  • Stir in onion, garlic, salt, black pepper, paprika, and oregano. Cook for 2-3 minutes.
  • Add the quartered potatoes and pour in the beef broth. Bring to a simmer, cover, and cook for 15 minutes.
  • Reduce heat, stir in heavy cream, and let simmer for 2 minutes.
  • Sprinkle cheddar cheese on top, cover, and let melt for 3-5 minutes.
  • Garnish with fresh parsley and serve warm.
