These baked cheesy mashed potato bites are the ultimate comfort food appetizer. They’re crispy on the outside, creamy inside, and super easy to make using leftover mashed potatoes. Perfect for parties, snacks, or kid-friendly dinners.
Ingredients

3 cups cold mashed potatoes

1 cup shredded cheddar cheese

1 large egg

¼ cup chopped chives

¼ cup all-purpose flour

½ tsp garlic powder

Salt and pepper to taste

½ cup grated Parmesan cheese

Grease for muffin pan
Instructions

Preheat oven to 400°F (200°C) and grease a mini muffin pan.

In a large bowl, combine mashed potatoes, cheddar, chives, flour, garlic powder, salt, and pepper.

Add egg and mix until fully blended.

Form small balls, roll each in Parmesan cheese, and place in the muffin cups.

Bake for 15–20 minutes until golden and crispy.

Cool slightly, remove from pan, and serve warm.
Notes

For best results, use cold mashed potatoes.

You can prep the mixture a day ahead and bake when ready.
