Ingredients
Scale
For the Hash Brown Bake:
- 2 lbs frozen hash browns, thawed
- 1 cup sour cream (or Greek yogurt for a lighter option)
- 1 can (10.5 oz) cream of chicken soup (or cream of mushroom for a vegetarian version)
- 1 ½ cups shredded cheddar cheese (plus more for topping)
- ½ cup chopped onion
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & black pepper to taste
- ¼ cup chopped fresh parsley (for garnish)
For a Crispy Topping (Optional):
- 1 cup crushed cornflakes or panko breadcrumbs
- 2 tbsp melted butter
Instructions
- Preheat Oven & Prepare Dish: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Mix Ingredients: In a large mixing bowl, combine hash browns, sour cream, cream of chicken soup, cheddar cheese, onion, garlic powder, paprika, salt, and pepper. Mix well.
- Assemble & Bake: Spread the mixture evenly into the prepared dish. If using the crispy topping, mix the crushed cornflakes or breadcrumbs with melted butter and sprinkle over the top. Bake for 45-50 minutes until golden brown and bubbly.
- Add Extra Cheese & Finish Baking: Sprinkle additional cheddar cheese on top during the last 5-10 minutes of baking.
- Cool & Serve: Let it rest for a few minutes before serving. Garnish with fresh parsley.
Notes
- Make it vegetarian: Use cream of mushroom soup instead of cream of chicken.
- Make-ahead option: Assemble the dish the night before, refrigerate, then bake in the morning.
- Gluten-free version: Use gluten-free cream soup and omit the crispy topping or use gluten-free breadcrumbs.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F until warmed through.
