Description

These Cheesy Mashed Potato Egg Rolls are the perfect crispy, cheesy snack! Creamy mashed potatoes mixed with smoky bacon bits, fresh green onions, and gooey cheddar cheese wrapped in a golden egg roll wrapper. Perfect for parties, snacks, or as an irresistible appetizer.


Ingredients

  • Mashed Potatoes: 2 cups, cooled (Use leftovers or your favorite recipe)

  • Bacon Bits or Crumbled Cooked Bacon: 1/4 cup (Turkey bacon works great, too)

  • Green Onions: 2, thinly sliced

  • Large Egg: 1 (For binding)

  • Garlic Powder: 1/2 tsp

  • Onion Powder: 1/2 tsp

  • Cheddar Cheese: 8 oz, cut into sticks (About 3 inches long and 0.25 inches wide)

  • Egg Roll Wrappers: 8 to 10 (Available in most grocery stores)

  • Vegetable Oil: For frying (Enough to submerge the egg rolls)


Instructions

  1. Prepare the Filling: In a large bowl, mix mashed potatoes, bacon bits, green onions, egg, garlic powder, and onion powder until well combined.

  2. Form the Rolls: Wrap about 3 tablespoons of the potato mixture around each cheese stick until completely covered.

  3. Wrap the Egg Rolls: Place the potato-cheese log on an egg roll wrapper, fold the sides, and roll tightly. Seal the edges with water.

  4. Heat Oil: Heat vegetable oil in a skillet or pot to 350°F (175°C).

  5. Fry the Egg Rolls: Fry each egg roll for 4–5 minutes until golden brown and crispy. Drain on paper towels.

  6. Serve: Serve hot with sour cream, ranch, or your favorite dipping sauce.
