– 1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
– 4 large flour tortillas
– 1 cup bell peppers, sliced (optional)
– 1 small onion, sliced (optional)
– 1 tablespoon olive oil
– 1 teaspoon taco seasoning (or to taste)
– Salt and pepper, to taste
– Sour cream, for serving (optional)
– Salsa, for serving (optional)
– Fresh cilantro, for garnish (optional)
Instructions
Creating cheesy chicken quesadillas is simple if you follow these steps:
1. Cook the Vegetables: In a skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers. Sauté until they are soft, about 5 minutes.
2. Season the Chicken: In a bowl, combine the shredded chicken with taco seasoning, salt, and pepper. Mix well to ensure the chicken is evenly coated.
3. Assemble the Quesadillas: Lay one tortilla flat on a clean surface. On half of the tortilla, add a portion of the seasoned chicken, sautéed vegetables, and a generous amount of shredded cheese.
4. Fold the Tortilla: Carefully fold the tortilla in half, covering the filling. Press down gently to secure.
5. Cook the Quesadilla: In the same skillet, place the folded quesadilla over medium heat. Cook for 3-4 minutes on one side until golden brown and crispy.
6. Flip and Finish Cooking: Using a spatula, carefully flip the quesadilla over and cook for an additional 3-4 minutes until the other side is also golden brown and the cheese is melted.
7. Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling.
8. Slice and Serve: Cut each quesadilla into wedges and serve warm.
