  • 2 cups cooked rotisserie chicken, shredded

  • 3 medium zucchinis, sliced (about 56 cups)

  • 1 1/2 cups shredded mozzarella cheese (or cheddar cheese)

  • 1/2 cup grated Parmesan cheese

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom for extra flavor)

  • 1/2 cup sour cream or Greek yogurt (for creaminess)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & pepper to taste

  • 1/2 cup crushed buttery crackers or bread crumbs (optional, for crunchy topping)

  • Chopped parsley (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Slice zucchinis and sprinkle them with salt. Let them sit for 10 minutes, then pat dry to remove excess moisture.

  3. In a large bowl, mix shredded chicken, cream of chicken soup, sour cream or Greek yogurt, garlic powder, onion powder, salt, and pepper.

  4. Fold in zucchini slices and 1 cup of mozzarella cheese until well coated.

  5. Spread the mixture evenly in the prepared baking dish.

  6. Sprinkle remaining mozzarella cheese, Parmesan cheese, and crushed crackers or breadcrumbs over the top (if using).

  7. Bake for 25–30 minutes until bubbly and golden brown.

  8. Let cool for 5 minutes before serving. Garnish with chopped parsley if desired.

Notes

  • To make it gluten-free, use gluten-free breadcrumbs or skip the topping.
