Description

Ingredients

  • 8 large eggs
  • ¼ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp butter
  • 1 lb breakfast sausage (or turkey sausage)
  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 8 small flour tortillas
  • For the Sauce:
  • 1 ½ cups heavy cream (or half & half)
  • ½ cup shredded cheese (for topping)
  • ½ tsp garlic powder

Instructions

  • Whisk eggs with milk, salt, and pepper. Cook in a skillet until just set.
  • Brown the sausage in a separate pan and drain excess grease.
  • Fill each tortilla with eggs, sausage, and cheese. Roll and place in a greased baking dish.
  • Mix heavy cream with garlic powder and pour over enchiladas. Top with extra cheese.
  • Bake at 350°F for 25-30 minutes until golden and bubbly.
  • Serve with green onions, diced tomatoes, and salsa.
