- 8 large eggs
- ¼ cup milk
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp butter
- 1 lb breakfast sausage (or turkey sausage)
- 1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 8 small flour tortillas
- For the Sauce:
- 1 ½ cups heavy cream (or half & half)
- ½ cup shredded cheese (for topping)
- ½ tsp garlic powder
Instructions
- Whisk eggs with milk, salt, and pepper. Cook in a skillet until just set.
- Brown the sausage in a separate pan and drain excess grease.
- Fill each tortilla with eggs, sausage, and cheese. Roll and place in a greased baking dish.
- Mix heavy cream with garlic powder and pour over enchiladas. Top with extra cheese.
- Bake at 350°F for 25-30 minutes until golden and bubbly.
- Serve with green onions, diced tomatoes, and salsa.
