Ingredients

  • Ground Beef: ½ pound
  • Butter: 4 tablespoons, divided
  • Carrots: ¾ cup, diced
  • Celery: ¾ cup, diced
  • Onion: ¾ cup, diced
  • Dried Basil: 1 teaspoon
  • Dried Parsley: 1 teaspoon
  • Potatoes: 4 cups, diced
  • Chicken Broth: 3 cups
  • All-Purpose Flour: ¼ cup
  • Velveeta Cheese: 1 to 2 cups, cubed
  • Whole Milk: 1½ cups
  • Salt: ¾ teaspoon
  • Black Pepper: ¼ to ½ teaspoon
  • Sour Cream: ¼ cup

Instructions

  1. Cook and crumble the ground beef until browned. Set aside.
  2. Sauté carrots, celery, onion, basil, and parsley in 1 tablespoon of butter until tender.
  3. Add potatoes, cooked beef, and chicken broth. Simmer until potatoes are soft.
  4. Make a roux by melting 3 tablespoons of butter and stirring in flour. Cook until bubbly.
  5. Gradually add the roux to the soup, stirring constantly. Boil for 2 minutes.
  6. Lower heat and stir in cheese, milk, salt, and pepper until smooth.
  7. Remove from heat and mix in sour cream. Serve with optional toppings like green onions or crumbled bacon.
