Description

Cheeseburger soup is a creamy, cheesy, and hearty comfort food loaded with ground beef, potatoes, and cheddar cheese. Perfect for cold nights and easy to make in just one pot!


Ingredients

  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup shredded carrots
  • 3 cups potatoes, peeled and diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 4 cups beef broth
  • 1 ½ cups milk or heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons flour (for thickening)
  • Optional toppings: Crumbled beef bacon, diced pickles, chopped parsley, toasted buns or croutons

Instructions

  • Brown the ground beef in a large pot, then drain excess grease and set aside.
  • Melt butter in the same pot, then sauté onions and carrots for 3 minutes. Add garlic and cook for 30 seconds.
  • Stir in diced potatoes, salt, black pepper, and smoked paprika.
  • Pour in beef broth, bring to a boil, then simmer for 15 minutes until potatoes are tender.
  • In a small bowl, mix flour with ½ cup of milk to create a slurry. Stir into the soup to thicken.
  • Gradually add the shredded cheddar cheese and the remaining milk, stirring until melted and creamy.
  • Return the cooked beef to the pot, mix well, and let simmer for 5 minutes.
  • Serve hot with optional toppings.

Notes

  • For extra creaminess, add a spoonful of cream cheese.
  • Substitute ground turkey for a lighter version.
  • Add diced jalapeños for a spicy kick.
