Cheeseburger soup is a creamy, cheesy, and hearty comfort food loaded with ground beef, potatoes, and cheddar cheese. Perfect for cold nights and easy to make in just one pot!

- 1 lb ground beef
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 cup shredded carrots
- 3 cups potatoes, peeled and diced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika
- 4 cups beef broth
- 1 ½ cups milk or heavy cream
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons flour (for thickening)
- Optional toppings: Crumbled beef bacon, diced pickles, chopped parsley, toasted buns or croutons
Instructions
- Brown the ground beef in a large pot, then drain excess grease and set aside.
- Melt butter in the same pot, then sauté onions and carrots for 3 minutes. Add garlic and cook for 30 seconds.
- Stir in diced potatoes, salt, black pepper, and smoked paprika.
- Pour in beef broth, bring to a boil, then simmer for 15 minutes until potatoes are tender.
- In a small bowl, mix flour with ½ cup of milk to create a slurry. Stir into the soup to thicken.
- Gradually add the shredded cheddar cheese and the remaining milk, stirring until melted and creamy.
- Return the cooked beef to the pot, mix well, and let simmer for 5 minutes.
- Serve hot with optional toppings.
Notes
- For extra creaminess, add a spoonful of cream cheese.
- Substitute ground turkey for a lighter version.
- Add diced jalapeños for a spicy kick.
