Description

For the Carrot Cake Bars:

  • 1 1/2 cups grated carrots (about 34 medium carrots)
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 3/4 cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp milk or cream (if needed)

Instructions

  • Prepare the Pan & Preheat Oven: Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  • Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Combine Wet Ingredients: In a large bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla extract until smooth and combined.
  • Combine Mixtures: Gradually add the dry ingredients to the wet ingredients. Mix just until combined.
  • Add Carrots & Nuts: Fold in grated carrots and chopped nuts if using.
  • Bake: Pour batter into prepared pan, spread evenly, and bake for 25-30 minutes. Check doneness with a toothpick. Let cool completely.
  • Prepare Frosting: Beat cream cheese and butter until creamy. Add powdered sugar and vanilla. Beat until smooth. Add milk if needed.
  • Frost & Slice: Spread frosting over cooled bars. Slice into squares and enjoy!

Notes

  • For extra flavor, toast the nuts before adding.
  • To make a healthier version, swap half the oil with applesauce or use whole wheat flour.
