For the Bars:

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground ginger

  • 1 cup vegetable oil (or melted coconut oil)

  • 1 cup granulated sugar

  • 1/2 cup brown sugar (packed)

  • 3 large eggs

  • 1 1/2 teaspoons vanilla extract

  • 2 cups shredded carrots (about 34 medium carrots)

  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)

  • 1/2 cup raisins (optional)

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 3 cups powdered sugar

  • 1 teaspoon vanilla extract


Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch pan or line with parchment paper.

  • In a medium bowl, mix flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

  • In a large bowl, combine oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well.

  • Fold in shredded carrots, chopped nuts, and raisins (if using).

  • Gradually add dry ingredients to wet ingredients and mix until just combined.

  • Pour batter into prepared pan and smooth the surface.

  • Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.

  • Let the bars cool completely before frosting.

  • Prepare the frosting by beating cream cheese and butter until smooth. Add powdered sugar and vanilla extract, mixing until creamy.

  • Spread frosting over cooled bars, slice, and enjoy!

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.

  • Freeze unfrosted bars for up to 2 months. Thaw and frost before serving.

  • For gluten-free bars, use a gluten-free flour blend.
