Ingredients
For the Bars:

2 cups shredded carrots (about 3–4 medium carrots)

For the Cream Cheese Frosting:

8 ounces cream cheese, softened

1/2 cup unsalted butter, softened

3 cups powdered sugar

1 teaspoon vanilla extract
Instructions

Preheat oven to 350°F (175°C) and grease a 9×13-inch pan or line with parchment paper.

In a medium bowl, mix flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

In a large bowl, combine oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well.

Fold in shredded carrots, chopped nuts, and raisins (if using).

Gradually add dry ingredients to wet ingredients and mix until just combined.

Pour batter into prepared pan and smooth the surface.

Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.

Let the bars cool completely before frosting.

Prepare the frosting by beating cream cheese and butter until smooth. Add powdered sugar and vanilla extract, mixing until creamy.
