For the Bread:
- 1½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ½ tsp salt
- 1 cup granulated sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 2 cups finely shredded carrots
- 1 cup chopped nuts (optional)

For the Vanilla Glaze:
- 2¼ cups powdered sugar
- 2 tbsp half-and-half
- 1 tbsp light corn syrup
- 1 tsp clear vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a separate bowl, beat sugar, eggs, oil, and vanilla until smooth.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Fold in shredded carrots and chopped nuts (if using).
- Pour batter into the loaf pan and bake for 50-55 minutes, or until a toothpick comes out clean.
- Cool in the pan for 15 minutes, then transfer to a wire rack.
- Prepare glaze by whisking together powdered sugar, half-and-half, corn syrup, and vanilla.
- Drizzle glaze over cooled bread and let it set before slicing.
Notes
- Store at room temperature for 3 days, in the fridge for 1 week, or freeze for up to 3 months.
- Swap vegetable oil with applesauce for a lower-fat version.
- Add raisins or shredded coconut for extra flavor.
