For the Cajun Chicken:
- 2 boneless, skinless chicken breasts (sliced)
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1 tablespoon lemon juice
For the Sweet Peppers:
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- ½ small red onion (sliced)
- ½ teaspoon dried oregano
- 1 tablespoon olive oil
- Salt and pepper (to taste)
For Serving:
- Steamed rice or quinoa
- Tortillas (for wraps)
- Fresh parsley (for garnish)
Instructions
- Season the chicken: Toss sliced chicken with Cajun seasoning, minced garlic, and lemon juice.
- Cook the chicken: Heat 1 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown. Remove from the pan.
- Sauté the peppers: In the same skillet, add 1 tbsp olive oil. Cook the sliced bell peppers, red onion, oregano, salt, and pepper for 5 minutes.
- Combine everything: Return the chicken to the skillet, mix well, and cook for another 1-2 minutes.
- Serve & enjoy: Serve over rice, in wraps, or as a salad topping. Garnish with fresh parsley.

- For extra heat, add red pepper flakes.
- Use chicken thighs instead of breasts for a juicier version.
