For the Cajun Chicken:

  • 2 boneless, skinless chicken breasts (sliced)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon lemon juice

For the Sweet Peppers:

  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • ½ small red onion (sliced)
  • ½ teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)

For Serving:

  • Steamed rice or quinoa
  • Tortillas (for wraps)
  • Fresh parsley (for garnish)

Instructions

  • Season the chicken: Toss sliced chicken with Cajun seasoning, minced garlic, and lemon juice.
  • Cook the chicken: Heat 1 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown. Remove from the pan.
  • Sauté the peppers: In the same skillet, add 1 tbsp olive oil. Cook the sliced bell peppers, red onion, oregano, salt, and pepper for 5 minutes.
  • Combine everything: Return the chicken to the skillet, mix well, and cook for another 1-2 minutes.
  • Serve & enjoy: Serve over rice, in wraps, or as a salad topping. Garnish with fresh parsley.

Notes

  • For extra heat, add red pepper flakes.
  • Use chicken thighs instead of breasts for a juicier version.
