A fresh twist on the classic Caesar salad, this Caesar Pasta Salad combines tender pasta, crunchy romaine, and a creamy avocado Caesar dressing. Perfect as a side dish, light lunch, or potluck favorite, it’s easy to make, versatile, and bursting with flavor.

- For the Dressing:
- 2 tbsp Worcestershire sauce
- 2 small avocados, pitted and peeled
- 1 tbsp minced garlic
- 2 tsp anchovy paste
- ½ cup extra-virgin olive oil
- ½ cup finely grated Parmesan cheese
- ¼ tsp freshly ground black pepper
- For the Salad:
- 8 oz uncooked pasta (rotini or penne)
- 2 romaine hearts, chopped
- Croutons, for topping
Instructions
- Blend dressing ingredients (Worcestershire, avocado, garlic, anchovy paste) until smooth. Slowly add olive oil, then stir in Parmesan and pepper.
- Cook pasta in salted water until al dente. Drain and let cool slightly.
- Combine pasta, romaine, and dressing in a large bowl. Toss to coat evenly.
- Top with croutons and extra Parmesan. Serve immediately or refrigerate until serving.

- Add croutons just before serving for maximum crunch.
- Store leftovers in an airtight container for up to 2 days.
