A fresh twist on the classic Caesar salad, this Caesar Pasta Salad combines tender pasta, crunchy romaine, and a creamy avocado Caesar dressing. Perfect as a side dish, light lunch, or potluck favorite, it’s easy to make, versatile, and bursting with flavor.

  • For the Dressing:
    • 2 tbsp Worcestershire sauce
    • 2 small avocados, pitted and peeled
    • 1 tbsp minced garlic
    • 2 tsp anchovy paste
    • ½ cup extra-virgin olive oil
    • ½ cup finely grated Parmesan cheese
    • ¼ tsp freshly ground black pepper
  • For the Salad:
    • 8 oz uncooked pasta (rotini or penne)
    • 2 romaine hearts, chopped
    • Croutons, for topping

Instructions

  • Blend dressing ingredients (Worcestershire, avocado, garlic, anchovy paste) until smooth. Slowly add olive oil, then stir in Parmesan and pepper.
  • Cook pasta in salted water until al dente. Drain and let cool slightly.
  • Combine pasta, romaine, and dressing in a large bowl. Toss to coat evenly.
  • Top with croutons and extra Parmesan. Serve immediately or refrigerate until serving.
