  • 1 yellow onion, diced
  • 1 packet taco seasoning
  • 1/4 cup water
  • 2 cups shredded Colby jack cheese
  • 2/3 of a 12-ounce bag tortilla chips
  • Optional toppings: sour cream, diced tomatoes, fresh cilantro, sliced jalapeños, guacamole, black olives

Instructions

  • Preheat oven to 450°F.
  • Cook ground beef and onion in a skillet over medium heat until browned. Drain excess fat.
  • Add taco seasoning and water, simmering until liquid evaporates.
  • Grease a bundt pan with cooking spray. Layer cheese, beef mixture, and tortilla chips in the pan, repeating until all ingredients are used. End with cheese on top.
  • Bake for 10-12 minutes or until cheese is melted and bubbly.
  • Let cool for 2 minutes, then flip onto a platter. Add toppings and serve immediately.
