Ingredients
Scale
- 1 Italian loaf, French baguette, or ciabatta (sliced)
- 3 tbsp extra virgin olive oil, divided
- 2 lbs Roma tomatoes, diced
- ¼ cup red or white onion, finely minced
- ¼ cup fresh basil, chopped
- 1 clove garlic, minced
- 2 tsp balsamic vinegar
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 garlic clove (for rubbing bread)
Instructions
- Preheat Oven – Set to 450°F (232°C). Slice bread and arrange on a baking sheet.
- Toast Bread – Brush slices with olive oil, sprinkle with salt, and bake for 5-7 minutes per side until golden and crispy.
- Prepare Tomato Mixture – In a bowl, combine diced tomatoes, onion, basil, minced garlic, balsamic vinegar, salt, black pepper, and 1 tbsp olive oil. Stir well.
- Enhance the Flavor – Once toasted, rub each slice with a cut garlic clove for extra aroma.
- Assemble – Spoon the tomato mixture over the toasted bread. Drizzle with extra olive oil if desired. Serve immediately.
Notes
- Use ripe, juicy tomatoes for the best flavor.
- To prevent sogginess, serve the tomato mixture separately and allow guests to top their own bruschetta.
- For extra depth, grill the bread instead of toasting in the oven.
