Description
These breakfast stuffed puff pastry bars combine crispy hash browns, creamy sausage gravy, eggs, melted cheese, and bacon, all wrapped in buttery, flaky puff pastry. A perfect meal-prep breakfast or brunch dish!

- 2 puff pastry sheets, thawed
- 8 oz ground sausage
- ¼ cup all-purpose flour
- ¾ cup milk
- 1 tsp black pepper
- 1 ½ cups frozen shredded hash browns
- 1 egg + 2 tbsp heavy cream (for egg wash)
- 4 slices Havarti or cheddar cheese
- ½ cup shredded cheddar cheese
- ½ cup cooked bacon, crumbled
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet, cook sausage until browned. Stir in flour, then slowly add milk and black pepper. Stir until thickened. Set aside.
- Cook hash browns in a pan until golden and crispy.
- Roll out one puff pastry sheet on the baking sheet. Spread sausage gravy evenly, leaving a 1-inch border.
- Add hash browns, cheese slices, shredded cheese, and crumbled bacon.
- Place the second puff pastry sheet on top and seal edges with a fork.
- Brush with egg wash and bake for 25-30 minutes, until golden brown.
- Let cool for 5-10 minutes before slicing. Serve warm.
Notes
- Can substitute turkey sausage or plant-based alternatives.
- Add jalapeños or hot sauce for a spicy kick.
- Freezes well for up to 2 months.
