Description
A refreshing summer salad combining sweet peaches, juicy blueberries
Ingredients

- 1 pint fresh blueberries
- 2 ripe peaches, diced
- 2 Persian cucumbers, sliced
- ½ cup crumbled feta cheese
- ¼ cup fresh basil, chopped
For the Dressing:
- 3 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp fresh basil, finely chopped
- Salt & black pepper, to taste
Instructions
- Wash and prepare the blueberries, peaches, cucumbers, and basil.
- In a large bowl, combine the blueberries, diced peaches, sliced cucumbers, and chopped basil.
- In a small bowl, whisk together Dijon mustard, honey, lemon juice, and olive oil until emulsified. Add salt and black pepper to taste.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly.
- Sprinkle crumbled feta cheese on top and give it one final light toss.
- Serve immediately for the freshest flavor.
Notes
- For extra crunch, add toasted almonds or walnuts.
- Swap feta for avocado or cashews for a dairy-free version.
- Best served fresh, but leftovers can be stored in the fridge for up to 24 hours.
