A refreshing summer salad combining sweet peaches, juicy blueberries


Ingredients

  • 1 pint fresh blueberries
  • 2 ripe peaches, diced
  • 2 Persian cucumbers, sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh basil, chopped

For the Dressing:

  • 3 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp fresh basil, finely chopped
  • Salt & black pepper, to taste

Instructions

  • Wash and prepare the blueberries, peaches, cucumbers, and basil.
  • In a large bowl, combine the blueberries, diced peaches, sliced cucumbers, and chopped basil.
  • In a small bowl, whisk together Dijon mustard, honey, lemon juice, and olive oil until emulsified. Add salt and black pepper to taste.
  • Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  • Sprinkle crumbled feta cheese on top and give it one final light toss.
  • Serve immediately for the freshest flavor.

Notes

  • For extra crunch, add toasted almonds or walnuts.
  • Swap feta for avocado or cashews for a dairy-free version.
  • Best served fresh, but leftovers can be stored in the fridge for up to 24 hours.
