This Blueberry French Toast Bake is a simple, crowd-pleasing breakfast treat with creamy, custard-soaked bread and bursts of juicy blueberries. Perfect for weekend brunch or holiday mornings, it’s easy to make and can even be prepared the night before!

- 1 loaf of bread (challah, brioche, or French bread), cubed
- 2 cups milk (or dairy-free milk)
- 4 large eggs
- 1/4 cup maple syrup or honey (for natural sweetness)
- 1 tsp vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 1 tsp lemon zest (optional, for brightness)
- 2 tbsp melted butter or coconut oil (for extra richness)
- 1/2 tsp cinnamon (optional, for warmth)
- Powdered sugar or extra maple syrup (for serving, optional)
Instructions
- Prepare the Baking Dish: Grease a 9×13-inch baking dish with butter or non-stick spray.
- Assemble the Bake: Place cubed bread evenly in the dish. Sprinkle blueberries over the bread.
- Make the Custard Mixture: Whisk together milk, eggs, maple syrup or honey, vanilla extract, lemon zest, melted butter, and cinnamon.
- Combine & Soak: Pour custard mixture over the bread and blueberries. Gently press bread down to absorb the mixture. Cover and refrigerate for at least 30 minutes or overnight.
- Bake: Preheat oven to 350°F (175°C). Bake uncovered for 40-45 minutes until golden brown and set.
- Serve & Enjoy: Dust with powdered sugar or drizzle with maple syrup before serving.
Notes
- For best results, let bread soak overnight.
- If using frozen blueberries, do not thaw before baking.
- To freeze, cut cooled bake into portions, wrap, and freeze for up to 2 months.
