  • 4 cups blueberries (fresh or frozen)

  • 2 tablespoons flour (or 1 tablespoon cornstarch)

  • 2 tablespoons granulated sugar (or coconut sugar or Swerve)

For the Topping:

  • 1 cup sifted flour (or almond flour)

  • ½ cup cold butter (or coconut oil)

  • ½ teaspoon salt

  • 1 cup granulated sugar (or coconut sugar or Swerve)

  • ½ teaspoon baking powder

  • ½ teaspoon vanilla extract

  • 2 teaspoons lemon zest (optional)


Instructions

  • Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.

  • Toss blueberries with flour and sugar. Spread in the dish.

  • In a bowl, combine topping ingredients. Cut in butter until crumbly.

  • Add vanilla and lemon zest. Mix lightly.

  • Sprinkle topping over blueberries evenly.

  • Bake 45–55 minutes until topping is golden and filling is bubbling.

  • Cool for 30 minutes before serving. Serve warm with ice cream or whipped cream.
