A healthy, protein-packed muffin made with cottage cheese, blueberries, and whole wheat flour. Great for breakfast or snacks!
Ingredients
– 1 cup cottage cheese
– 1 cup blueberries
– 1 cup whole wheat flour
– ¼ cup honey
– 2 eggs
– 1 tsp baking powder
– ½ tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin.
2. Mix cottage cheese, honey, eggs, and vanilla.
3. Add flour and baking powder; mix gently.
4. Fold in blueberries.
5. Divide batter into muffin cups. Bake for 20-25 minutes.

– Use frozen blueberries without thawing to prevent watery batter.
– Store muffins in an airtight container for up to 3 days or freeze for longer storage.
