- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- 1 can (14 oz) diced tomatoes
- 3 cups butternut squash, peeled & cubed
- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained & rinsed
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat. Add onion and cook until soft.
- Stir in garlic, cumin, smoked paprika, salt, and black pepper, and cook for 30 seconds.
- Add diced tomatoes and butternut squash. Stir well.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes.
- Stir in black beans and cook for another 5 minutes.
- Remove from heat and stir in lime juice.
- Serve garnished with fresh cilantro.

- Add extra broth for a soupier consistency.
- Blend a portion of the stew for a creamier texture.
- Spice it up with jalapeños or cayenne pepper.
