Ingredients

  • 1 ripe avocado

  • 2 tablespoons lime juice

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 1 (15-ounce) can black beans, rinsed

  • 1½ cups cherry tomatoes, halved

  • 1 cup canned corn kernels, drained (or fresh)

  • ¼ cup thinly sliced red onion

  • ¼ cup chopped fresh cilantro

  • 6 cups mixed salad greens (spinach, arugula, or spring mix)


Instructions

  • In a large bowl, mash the avocado with lime juice, olive oil, salt, and pepper until smooth and creamy.

  • Stir in the black beans, cherry tomatoes, corn, red onion, and cilantro.

  • Divide the mixed greens among 4 bowls.
