Ingredients
For the Cream Filling:

½ cup Biscoff cookie butter

2 cups heavy whipping cream (chilled)
For Assembly:

50–60 Biscoff cookies

1½ cups strong coffee or espresso (room temperature)

Instructions

Whisk together mascarpone, Biscoff spread, sugar, salt, and vanilla until smooth (30–60 seconds).

Add cold cream and whip until stiff peaks form (1–2 minutes).

Dip cookies in coffee for 1–2 seconds, layer half on the bottom of the dish.

Spread half the cream mixture.

Repeat with another cookie layer and remaining cream.

Pipe top with a star tip if desired.

Chill for at least 4 hours or overnight.
