  • 1 small red bell pepper, diced
  • 1 medium zucchini, diced
  • 6 green onions, thinly sliced (white and green parts separated)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • 2 cups red enchilada sauce
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 8 (6-inch) corn tortillas, cut into wedges
  • 1 ½ cups shredded Mexican blend cheese, divided

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Cook ground beef until browned, then add diced bell pepper, zucchini, and green onion whites.
  • Stir in chili powder, cumin, garlic powder, and oregano.
  • Add enchilada sauce, black beans, and corn. Let simmer.
  • Mix in tortilla pieces and ½ cup of shredded cheese.
  • Top with remaining cheese, cover, and let cook until melted.
  • Garnish with green onions, cilantro, avocado, or sour cream before serving.
