- ½ tsp garlic powder
- ½ tsp dried oregano
- 2 cups red enchilada sauce
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup frozen corn
- 8 (6-inch) corn tortillas, cut into wedges
- 1 ½ cups shredded Mexican blend cheese, divided
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Cook ground beef until browned, then add diced bell pepper, zucchini, and green onion whites.
- Stir in chili powder, cumin, garlic powder, and oregano.
- Add enchilada sauce, black beans, and corn. Let simmer.
- Mix in tortilla pieces and ½ cup of shredded cheese.
- Top with remaining cheese, cover, and let cook until melted.
- Garnish with green onions, cilantro, avocado, or sour cream before serving.
