Description

This beef enchilada casserole is a simple, cheesy, and delicious one-pan meal. It features layers of seasoned beef, corn tortillas, enchilada sauce, and melted cheese, making it the perfect dish for family dinners or meal prep.

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • 10 corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheddar or Mexican cheese blend
  • ½ cup sour cream (optional, for serving)
  • ¼ cup chopped fresh cilantro (for garnish)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a skillet, cook diced onion for 2 minutes. Add garlic and cook for 30 seconds.
  • Add ground beef and cook until browned. Drain excess grease.
  • Stir in cumin, chili powder, paprika, salt, and black pepper. Mix well.
  • In the baking dish, spread ½ cup enchilada sauce. Layer 5 tortillas, half of the beef, and ⅔ cup cheese. Repeat the layers.
  • Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
  • Let it rest for 5 minutes before serving. Garnish with cilantro and serve with sour cream.

Notes

  • For extra flavor, add diced jalapeños or bell peppers to the beef mixture.
  • Use ground turkey or chicken for a lighter version.
  • Store leftovers in the fridge for up to 4 days.
