Ingredients
For the Balsamic Sauce:

2 Tbsp. avocado or olive oil

Tomato Mozzarella Topping:

8 oz. grape tomatoes, halved

8 oz. fresh mozzarella balls (ciliegine or pearls)

2 Tbsp. fresh basil, finely chopped

Chicken:

2 lbs. boneless, skinless chicken breasts (pounded to even thickness)

2 Tbsp. avocado oil (or other high-heat oil)

Instructions

Preheat oven to 400°F (204°C).

In a bowl, whisk together balsamic sauce ingredients.

In another bowl, combine tomatoes, mozzarella, basil, and season with salt and pepper.

Heat oil in an oven-safe skillet and sear chicken 1–2 minutes per side until golden.

Pour balsamic sauce into the skillet, bring to simmer, then remove from heat.

Top chicken with tomato mozzarella mixture.

Bake uncovered for 18–23 minutes or until internal temp reaches 165°F.

Let rest 5 minutes, garnish with fresh basil, and serve.

Make sure to drain mozzarella well to prevent a watery bake.
