For the Balsamic Sauce:

  • 1/3 cup balsamic vinegar

  • 2 Tbsp. honey

  • 2 Tbsp. avocado or olive oil

  • 2 garlic cloves, minced

  • 1 tsp. Italian seasoning

  • 1 Tbsp. Dijon mustard

  • Salt and pepper to taste

Tomato Mozzarella Topping:

  • 8 oz. grape tomatoes, halved

  • 8 oz. fresh mozzarella balls (ciliegine or pearls)

  • 2 Tbsp. fresh basil, finely chopped

  • Salt and pepper to taste

Chicken:

  • 2 lbs. boneless, skinless chicken breasts (pounded to even thickness)

  • 2 Tbsp. avocado oil (or other high-heat oil)

  • Salt and pepper


Instructions

  • Preheat oven to 400°F (204°C).

  • In a bowl, whisk together balsamic sauce ingredients.

  • In another bowl, combine tomatoes, mozzarella, basil, and season with salt and pepper.

  • Heat oil in an oven-safe skillet and sear chicken 1–2 minutes per side until golden.

  • Pour balsamic sauce into the skillet, bring to simmer, then remove from heat.

  • Top chicken with tomato mozzarella mixture.

  • Bake uncovered for 18–23 minutes or until internal temp reaches 165°F.

  • Let rest 5 minutes, garnish with fresh basil, and serve.

Notes

  • Make sure to drain mozzarella well to prevent a watery bake.

  • For extra caramelization, broil during the last 2 minutes.

  • Chicken thighs can be substituted but may require a longer bake time.

  • Gluten-free as written (just double-check mustard and vinegar labels).
