This Baked Tuscan Chicken is a creamy, garlicky, and cheesy dish made with tender chicken breasts simmered in a rich Parmesan sauce with sun-dried tomatoes and spinach. It’s a one-pan meal that’s perfect for a quick and satisfying dinner.

- 4 boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Italian seasoning
- 1 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 1 tbsp lemon juice
- 1 tsp cornstarch + 2 tbsp water (optional for thickening)
- Fresh basil or parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown, then set aside.
- In the same pan, sauté garlic and sun-dried tomatoes for 1 minute.
- Stir in heavy cream, Parmesan cheese, and lemon juice. If needed, mix cornstarch with water and add to thicken. Simmer for 2 minutes.
- Return chicken to the pan, spoon sauce over it, and add spinach.
- Bake uncovered for 15-20 minutes until chicken reaches 165°F (75°C).
- Garnish with fresh basil or parsley and serve hot.
Notes
- For a thicker sauce, use an extra tablespoon of Parmesan or a bit more cornstarch.
- For a dairy-free version, substitute coconut milk for heavy cream.
- Add red pepper flakes if you want a spicy kick.
