- 2 boneless, skinless chicken breasts (halved to make 4 cutlets)
- ½ tsp salt
- ½ tsp black pepper
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 large egg (beaten)
- 1 tbsp olive oil
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season chicken with salt and pepper.
- In one bowl, beat the egg. In another, mix panko, Parmesan, and Italian seasoning.
- Dip chicken in the egg, then coat with the breadcrumb mixture.
- Place on a baking sheet, drizzle with olive oil, and bake for 20 minutes, flipping halfway.
- Remove from oven, spoon marinara sauce on each piece, sprinkle with mozzarella cheese, and bake for another 5 minutes until cheese is melted.
- Garnish with fresh basil and serve hot.
