Description

These Bacon Pimento Deviled Eggs are a creamy, smoky, and cheesy twist on the classic appetizer. With crispy bacon, tangy pimento cheese, and bold flavors, they make the perfect party snack, potluck dish, or holiday treat.


Ingredients

  • 6 large eggs, hard-boiled and peeled
  • 3 tbsp mayonnaise
  • 2 tbsp pimento cheese (or diced pimentos + shredded cheddar)
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika (plus extra for garnish)
  • 2 strips bacon, cooked crispy and crumbled
  • 1 tsp pickle juice (optional)
  • Salt and pepper to taste
  • Chives or green onions, chopped (for garnish)

Instructions

  • Hard-Boil the Eggs: Place eggs in a pot, cover with water, and bring to a boil. Turn off heat, cover, and let sit for 10-12 minutes. Transfer to an ice bath, then peel.
  • Prepare the Filling: Slice eggs in half lengthwise. Remove yolks and mash them in a bowl.
  • Mix the Ingredients: Add mayonnaise, pimento cheese, Dijon mustard, garlic powder, smoked paprika, and pickle juice. Mix until smooth. Season with salt and pepper.
  • Fill the Egg Whites: Spoon or pipe the yolk mixture into the egg white halves.
  • Garnish & Serve: Sprinkle with extra paprika, crumbled bacon, and chopped chives. Serve chilled.

Notes

  • For easy peeling, use slightly older eggs and chill them in an ice bath after boiling.
  • Adjust the spice level by adding cayenne pepper or hot sauce.
