- 10 large eggs
- 1 ripe avocado (halved and pitted)
- 1 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon hot sauce (optional)
- Salt and freshly ground black pepper (to taste)
- 2 tablespoons minced chives (for garnish)
Instructions
- Place eggs in a pot and cover with water. Boil, turn off heat, and let sit for 11 minutes. Cool eggs in an ice bath before peeling.
- Halve eggs lengthwise, remove yolks, and mash yolks with avocado, lemon juice, mustard, and hot sauce until smooth. Season with salt and pepper.
- Spoon or pipe the avocado mixture into egg-white halves and garnish with chives.
- Serve immediately or refrigerate for up to one day.
