Ingredients

    • 2 cups masarepa (pre-cooked white cornmeal)
    • ½ teaspoon sea salt
    • 2 ounces cotija cheese, finely crumbled
    • 1 tablespoon butter, softened
    • 1¼ cups warm water (plus more if needed)
  • For the Filling:
    • 8 ounces mozzarella cheese, shredded
  • For Cooking:
    • Oil or butter for the skillet

Instructions

  • Prepare the Dough: Mix masarepa, salt, cotija cheese, butter, and water until smooth. Let rest for 10 minutes.
  • Check Consistency: Adjust with water if needed until dough is pliable.
  • Shape the Arepas: Divide dough into 8 portions, flatten into disks, and fill with mozzarella. Seal edges to form a stuffed disk.
  • Cook Arepas:
    • Stovetop Method: Cook in a greased skillet over medium-low heat for 4–5 minutes per side.
    • Air Fryer Method: Preheat to 350°F (175°C) and cook for 5 minutes, flip, and cook for another 2–3 minutes.
  • Serve: Enjoy warm with your favorite toppings or dips.
