These Arepas con Queso are crispy on the outside, soft on the inside, and stuffed with gooey cheese. Perfect as a snack, side dish, or meal!

- For the Dough:
- 2 cups masarepa (pre-cooked white cornmeal)
- ½ teaspoon sea salt
- 2 ounces cotija cheese, finely crumbled
- 1 tablespoon butter, softened
- 1¼ cups warm water (plus more if needed)
- For the Filling:
- 8 ounces mozzarella cheese, shredded
- For Cooking:
- Oil or butter for the skillet
Instructions
- Prepare the Dough: Mix masarepa, salt, cotija cheese, butter, and water until smooth. Let rest for 10 minutes.
- Check Consistency: Adjust with water if needed until dough is pliable.
- Shape the Arepas: Divide dough into 8 portions, flatten into disks, and fill with mozzarella. Seal edges to form a stuffed disk.
- Cook Arepas:
- Stovetop Method: Cook in a greased skillet over medium-low heat for 4–5 minutes per side.
- Air Fryer Method: Preheat to 350°F (175°C) and cook for 5 minutes, flip, and cook for another 2–3 minutes.
- Serve: Enjoy warm with your favorite toppings or dips.
