For the Apple Pie Filling:

  • 2 cups apples (Granny Smith, peeled and diced)
  • ¼ cup sugar (or honey/maple syrup)
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 1 tbsp cornstarch + 2 tbsp water (to thicken)

For the Egg Rolls:

  • 810 egg roll wrappers
  • 1 egg (beaten, for sealing)
  • Oil for frying

For the Topping:

  • ¼ cup sugar + 1 tsp cinnamon
  • Caramel sauce or whipped cream (for dipping)

Instructions

  • Prepare the apple filling: Cook apples, sugar, cinnamon, butter, and lemon juice over medium heat for 5–7 minutes. Add cornstarch slurry and stir until thickened. Let cool.
  • Assemble egg rolls: Place apple filling in wrappers, brush edges with egg wash, roll tightly, and seal.
  • Fry: Heat oil to 350°F (175°C) and fry egg rolls for 2–3 minutes per side until golden brown. Drain on paper towels.
  • Coat and serve: Roll warm egg rolls in cinnamon sugar and serve with caramel or whipped cream.

Notes

  • Use Granny Smith apples for a tart contrast.
  • For a healthier version, bake at 375°F for 15–18 minutes or air-fry at 370°F for 8–10 minutes.
