A quick and healthy one-bowl dinner made with juicy chicken sausage and roasted vegetables, all cooked to crispy perfection in the air fryer in under 20 minutes.


Ingredients

  • 1 large red bell pepper, cut into 1-inch pieces

  • 1 large orange bell pepper, cut into 1-inch pieces

  • 1 red onion, peeled and cut into 1-inch pieces

  • 1 medium zucchini, cut into 1-inch pieces

  • 1 tablespoon avocado oil (or olive oil)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon Italian seasoning

  • ½ teaspoon kosher salt

  • Pinch of black pepper

  • 1 (12 oz) package chicken sausage, sliced into ¾-inch rounds


Instructions

  • Chop bell peppers, onion, and zucchini into 1-inch pieces.

  • Toss vegetables in a large bowl with avocado oil.

  • Mix garlic powder, onion powder, Italian seasoning, salt, and pepper in a small bowl.

  • Sprinkle seasoning over veggies and toss to coat.

  • Add sliced sausage and toss again.

  • Preheat air fryer to 390°F if needed.

  • Spray basket with cooking spray and add sausage-veggie mix in a single layer.

  • Cook for 10 minutes, tossing halfway.

  • Serve immediately or over rice, greens, or with your favorite sauce.

Notes

  • Cook in batches if needed to avoid overcrowding.

  • For extra flavor, serve with pesto, sriracha mayo, or tahini sauce.

  • Swap in any vegetables you like (broccoli, mushrooms, etc.).
