Description

This Air Fryer Coconut Shrimp recipe offers a perfectly crispy and golden coating with a deliciously sweet and savory flavor. Made with juicy shrimp coated in shredded coconut and spices, this dish is a healthier, quick, and mouthwatering alternative to deep-fried shrimp.

Ingredients

Scale
  • Shrimp: 1/2 lb tail-on large shrimp (thawed and dried)

  • Egg Wash: 1 egg, beaten

  • Coconut Coating:

    • 1/2 cup shredded coconut

    • 1 tsp garlic powder

    • 1/2 tsp paprika

    • 1/4 tsp onion powder

    • 1/4 tsp salt

Instructions

  • Prepare Ingredients: Mix shredded coconut, garlic powder, paprika, onion powder, and salt in a medium bowl. Beat the egg in a separate bowl.

  • Coat Shrimp: Dip each shrimp in the egg wash, then coat with the coconut mixture, pressing gently to adhere.

  • Preheat Air Fryer (Optional): Preheat air fryer to 350°F.

  • Arrange Shrimp: Lightly spray air fryer basket with cooking spray. Place shrimp in a single layer in the basket.

  • Cook: Air fry at 350°F for 10 minutes, flipping halfway through.

  • Serve: Remove shrimp and serve immediately with cocktail sauce or Pineapple Thai sauce.

Notes

  • For extra crunch, lightly toast the shredded coconut before coating the shrimp.

  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.

  • Reheat in the air fryer at 350°F for 3-4 minutes for best results.
